This ain't my opinions on what should be done with 1.17, Im'ma wait for staffs post on that. This is just how you can obtain the new blocks n stuff causes there are so many.
With 1.17 Pre-1 out, I'de thought that I would list all of the new blocks/items/mobs and how to get them since a lot of them are obtained via strange/new ways. In case mojang decides to make some major changes before release, I will update this post.
Blocks/Items:
-Raw Copper/Iron/Gold: Mine their ores with a non-silk pickaxe. Smelt these to get ingots.
-Raw Copper/Iron/Gold Blocks: Crafted with 9 raw items of the type you want to make.
-Copper: Can be obtained from either smelting raw copper or by killing drowned. Drowned no longer drop gold ingots! Can be crafted into blocks like the other ores.
-Cut Copper: Combine 4 in a grid to craft them just like stone bricks! Cut copper has slabs and stairs versions of itself also! Stone cutter works on this block!
-Weathered Copper: Leave a copper block placed in the world and after 50-82 days in mc, it will oxidize to the next stage. There are 4 total stages of oxidization with each having their own slabs and stairs! (Slabs and stairs will also oxidize!).
-Waxed Copper: Don't want your copper to change? Add some honeycomb to it either in the crafting grid or by right clicking the block with it to wax it! This will make the copper block not oxidize anymore! You can remove the wax by right clicking the block with an axe.
-Lightning Rods: Craft these with 3 copper ingots to attract nearby lightning during a storm!
-Smooth Basalt: Smelt your basalt to make it S m o o t h
-Calcite: What diorite could have looked like! Find it generating around Amethyst Geo's along with Smooth Basalt!
-Amethyst Bud/Clusters/Crystals: Inside these Geo's you will find Budding Amethyst blocks, give it some time and these budding blocks will grow, you guessed it, a bud of amethyst! Give that bud sometime to grow and you will end up with an Amethyst Cluster! Obtain any stage with a silk pick, or mine the Cluster with a normal pick, or fortune for even more amethyst crystals!
-Blocks of Amethyst: Combine 4 crystals together to get a cool looking purple block. Walk on the block to get sound amazing crystal like sounds!
-Spyglass: Combine 2 Copper and 1 Amethyst crystal to get a Spyglass! Zoom in without needing optifine!
-Tinted Glass: 1 Glass + 4 Amethyst Crystals will get you 2 tinted glass! See through the block like glass without letting light through!
-Candles: Craft them with 1 honeycomb + 1 string to get yourself a candle straight out of the pot! Dye them to get 16 different colours of them! 4 candles can be placed in a single space to allow for customization light levels! Just be sure to light them, they don't come pre-lit!
-Glow Lichen: Spawns pre-generated in caves around the world, bone meal them to spread the light around to other blocks!
-Glow Berries: Want some vines that grow as well as glow? Glow Berries can do both! Bone meal the cave vines to grow some glow berries, then place them on the roof to get more cave vines! These vines will both grow down, and grow light!
-Pointed Dripstone: Can be found in small dripstone pockets in caves, can also be obtained via the wandering trader!
-Pointed Dripstone Block: Craft 4 Pointed Dripstone together to get this block! Place water above it, and a pointed dripstone below it, and the pointed dripstone will grow! You can also put a cauldron under this set up and it will fill with either water or lava if you place lava above this block!
-Dripleaves: The small version of this block can only be obtained via the wandering trader for now. Bone meal this block to get the large version! Just don't stand on it for too long or else you might find yourself on the floor.
-Moss: Find yourself a wandering trader and get yourself some moss blocks! Place it in the middle of stone and bone meal the block to convert that stone into this nice grassy green moss block. Craft 2 of them together to get a carpet of moss! You can also find Moss Blocks in newly opened shipwreck chests!
-Azalea: Both the normal and flowering azalea bush can be obtained from bone meal'ing moss. Place these bushes on some grass/dirt, bone meal, and bam, ya got yerself a new tree. No new wood, but new leaves!
-Rooted Dirt: Like Podzol generates under spruce trees when you grow it, Rooted dirt will generate under Azalea trees when you grow them! Till this block with a hoe to convert it back to dirt and get yourself a hanging root!
-Spore blossom: Sadly can not be obtained or farmed in survival as of 1.17.
-Deepslate: Like blackstone this is a dark stone type with tons of variations that you can get from it! Find it at the bottom of your world in patches, do a bunch of crafting, and obtain all 20 different deepslate blocks!
-Tuff: Similar to deepslate, find it near the bottom of the world in patches!
-Deepslate Ores: Search the bottom of the world and you might find yourself some new ores! Well not new, but they are sitting in Deepslate instead of stone.
-Glow Ink/Item Frames/Signs: Find yerself some glowsquid, look at it, admire it, kill it, and get yourself some glow ink! Use this glow ink to turn dyed signs neon colours, or combined it with an item frame to make your items glow! (Note: None of these things glow, they are just automatically lit up without the need for outside light levels.

Mobs:
-Glow Squid: Reverse squid! Find them in non Ocean/River biomes under y63!
-Axolotl: Start covering up your bodies of water if you want to find this animal! They only spawn under y63 in areas with blocks above the water.
-Goats: They will be spawning in the mountain biomes of old (and new when they are added)! Go up to them and get yourself knocked back down the mountain into a lava pit.
